Adam/Henry Schaff in NY

I am looking for any information on Adam Schaff, born unknown, supposedly in Paris, France. Adam married Marien Smith, also supposedly born in Paris, France. Adam and Marien had Henry Schaff (1862-1934), who married Alma Leach in Onondaga County, NY.

Also, does anyone know the origins of the name 'Schaff'? I thought it was a German name? Was it also French? My husband is the real 'Schaff' and has no idea!
