I don't know the answer, but this information might be helpful. At the SC Archives site, there are several plats and land grants under the name Eustace in Colleton Co, Berkley Co, Craven County (which covered a large area of SC including Fairfield County) and St Mark's Parish which also includes Fairfield. There is nothing for Euistee, this is probably a phonetic spelling by a census taker. Eustis gets some matches at the Archives, but nothing in Fairfield and no land records. It is also probably a phonetic spelling of Eustace. Ancestry also brings up Estes and when that is typed in at the Archives you get Huestess. I have heard the name Huestess in Fairfield and Estes is a fairly common name here. Hope this helps.
