I have done massive work on the Rollmann family in the Rheinland, especially the Kelberg and Adenau areas, some of which belonged to the Archdiocese of Cologne.
I was raised there and later immigrated to America and Canada.
Church records generally start with this originally Roman Catholic family in the early 1600s, although the "fire books" (taxation records) in Trier can push it a generation beyond that, unless you hit nobility, such as Rollmann (Ruleman) von Sinzig. The name is originally a first name, and the oldest version I could find of my own family was Rul[e]man the Miller in the end-1500s. Often you come across the following variations, because many common people couldn't write and the entries in the church records reflect the way the local clergyman understood the name. It was far from normed in the 17th century, and in the U.S. invariably dropped one "n." I've seen: Rulman, Ruleman, Ruhleman, Rollman, Rolman, Rohlman, Rollmann.
Historically, most Rollmann in North America come from:
1. Bielefeld and Northern Gemrant(Protestants)
2. Eifel region (my own family, originally

3. Bavaria (RC)
4. Frankfurt (Jewish)
These families are not related with each other.
