Ms. Princing, Thank you for your message and interest in the DNA testing. The short answer is: no, the DNA testing that is used in surname projects will not tell you "how much" of any particular ethinic background an individual has. We primarily test yDNA, which is passed from father to son, so the ethnic oomponent ("haplotype") of the test applies only to the line of the father's father's father's (etc.) origin. Some studies test mitochondrial DNA (mtDNA), which is passed from the mother to all of her children, but again, the information revealed applies to the mother's mother's mother's (etc.) origin only. I learned of my Native American ancestry because a cousin of mine who is a direct male descendant on that line was tested. The test does not indicate a particular tribe or Nation - we must rely on documentary evidence to determine that.
