From my research the Reding's spelled with a single "d" generally can trace their origin to Luxembourg and settled in Luxembourg enclaves in Minnesota, Iowa and other parts of the Midwest.. However, over the years some have adopted a "dd" spelling option.

I have found that most Redding's, i.e., "dd", lines had their origin in England and settled in Virginia and southern states. Again some have opted for a single "d" spelling.
