Hi Scott,
the easy bit is that copies of the original probate records can be ordered from the Borthwick Institute, York, England. Details are given on their web site (link provided fromn the wills you mention).
I will contact you directly with answers to your detailed questions, it may be a couple of weeks as I'll need to go back to some of my old records,
