I would write them one at a time, starting with the parish. If they don't have the record, perhaps they know where you can locate it (for instance, if the records were moved to a neighbor parish).
Experienced researchers in this forum said that some priests gently answer the letter, whereas some don't: maybe they don't have time (genealogy search is not part of their business) or they don't have staff enough to do it.
Also, parishes do not charge for a search so you can offer a donation in retribution. This subject has already been discussed here: how to send money to a parish? Some say it should never be put in an envelope.
Under any circumstances, write in Polish and be sure to use the proper polish caracters. Provide them as much information about your ancestor as possible.
