To complicate matters there was a completely different Isaac Plummer who would have been born about the same time as your Isaac (actually a bit earlier), but who died in 1846. He was baptized on his deathbed by the Catholic pastor of Wilmore, July 18, 1846. Isaac's estate came to probate (Cambria Estate File #468), in August. The inventory of Isaac's goods was taken August 11th, which leaves us to presume that his death took place in the preceding week. This Isaac left a widow Susan, 3 children over 14: Thomas, Samuel, and Margery, and 4 other children under 14: Philip, Mary, Elizabeth, and Joseph. Elisha Plummer was named legal guardian of the Plummer children -- a fact that only indicated that he would represent them in their legal matters.
