Actually, William Pitt, 1st Earl of Chatham, had 3 sons and a daughter.
John Pitt became 2nd Earl of Chatham and died c1829 without issue.
Wiliam Pitt, you have already covered. (But the "he liked his puddings" comment is simply because his alleged last words were "I could do with one of Mrs [I forget her name]'s pudding's now). His last words were also alleged to have been "Oh my country - how I leave [or love] my country."
And there was James Charles Pitt, the youngest brother, who joined the Navy and died at sea aged about 19.
