Hi Peter,
I don't know whether you are descended from the same Pilsburys/Spilsburys of Leek as I am, but the story about the misheard name is close to that which my father tells. He was born in Leek and (I think) had a Spilsbury grandmother. Dad maintains that a Pilsbury in the 19th century had a lisp and that was what caused the vicar to mishear. This sounds unlikely, as vicars would know the names of their parishioners, and mistakes can be corrected. Nonetheless, the records show the spelling changing in the early 19th century in one family, the earlier children being baptisd Pilsbury and the later ones Spilsbury. Of course, the existence of Spilsburys nearby would make the mistake on the vicar's part more likely.
Cheers Peter
