ELISABETH PARSONS, b ca 1835 AL; A WIDOW IN 1880 JEFFERSON CO AL

Could use some help with the following person found on the 1880 Jefferson Co AL Census:

HH# 141
James Cosby age 70 b. SC (I think it should be NC)
Ann Cosby age 70 b. AL (I think it should be TN)
Milton Cosby 25 b. AL
ELISABETH PARSONS age 45 born AL-Widowed

I believe this family to be the James Cosby family of Jefferson, Blount & St Clair counties, AL. On the 1850, 1860 census, a child named Elisabeth is never shown for James & Ann Cosby. I can not locate this family in 1870 in any state. Then she pops up on this 1880 census.

Can anyone furnish me information about this Elisabeth?
