I suggest trying to find Jacob and Katharine's tombstones to get exact dates. From the census it would seem they are more than likely buried in Parryville, possibly Bowmanstown or Towamensing cemetery near Palmerton.
Deaths from 1893 to 1905 were recorded at the Carbon County Register of Wills but are now at the Carbon County Archives down the street. They usually didn't list the parents' names but he will give you the date of death and burial place and possibly the place of birth. There may be wills and deed records at the courthouse and at the archives that may have what you need. However, the county wasn't formed until 1847 so any court records for the people you need would be at the Monroe County Courthouse. However, Monroe County wasn't formed until 1836 so any such records you might need would be at the Northampton County Courthouse. Many of the families of Carbon County originally came from Lehigh County which was itself formed in 1811 from Northampton County.
The Dimmick Library in Jim Thorpe has some records but not many and any research requires hands on research including for obituaries. Oddly enough there are actually more church and cemetery records for Carbon County at the Lehigh County Historical Society than can be found anywhere in Carbon County.
