There are a couple of towns in Holland named Ouderkerk. One near Amsterdam, I think the theory is that is where the family originated.
Not sure why the family came to Canada. I came across mention online of Isaac & Caroline's sons, Albert: ALBERT ODERKIRK

Doesn't say why his family came to Canada, merely that his parents brought him to Ontario.
"Mr. Oderkirk was born in Granby, New York, on December 8, 1858, being the son of Isaac and Caroline (Weatherwax) Oderkirk, natives of New York and now living in Canada. The father was born in 1832, and the mother in 1836. Our subject was taken by his parents to the province of Ontario, Canada, when young, and there he received his education in, the excellent schools of that province, attending mostly at Tanworth. He made several trips to his old home and at the age of twenty-six he settled in North Dakota, taking land near Wheatland." etc.
Isaac & Caroline were my Great-Grandmother's grandparents. From what I've heard of the Oderkirks they were a very severe, humourless, strict, non-drinking bunch. Although I'd be happy for someone to prove me wrong.
