Hi:

I am the poster of the original posting, about a year ago.

I have come to be of the opinion that the 1755 Jacob Osman will was that of a Jacob of the next generation (3), possibly a son of this Jacob, or or of one Jacob-2's siblings.

This is based on the following:

1698 Census:

Jacob, Sarah, Mary, Sarah junjr, Eliza, Hester, Pinnina, Hannah, Martha widdw, Sarah
(307-316)

This matches Jacob-2 Osman and his wife Sarah-3 Corwin (John-1, Mathias-1).
The widow Martha above is the matriarch of this group: Martha-2 (William-1)
(Purrier) Osman. The third Sarah is a mystery to me.

Note: The 89 apparently referring to age.

This would all point to the 1755 will being of the next generation, probably a son of the above:

Page 108.--In the name of God, Amen, October 12, 1755. I, JACOB OSMAN,
of Southold, in Suffolk County, yeoman, being sick. I leave to my
beloved wife Sarah the use of all lands and buildings for her
comfortable support during the time she remains my widow. The
reversion of said lands and buildings I leave to my eldest son, Peter
Osman, and he shall pay to his sister, Elizabeth Osman, 3 when the
said lands become his. My executors are to sell personal property
sufficient to pay debts, and the rest I leave to my wife for her
comfortable support and to dispose of at her discretion among my 4
younger children, Sarah, Deborah, Almodan, and Elizabeth Osman. I make
my wife and my neighbor, John Clark, executors.

The Corwin Genealogy has melted these two families into one Jacob and one family; which I don't believe holds any water, especially when considering the death records for the Jacob and Sarah in 1748 and 1707, respectively, the "younger" children reference, etc.
