That is true as far as census takers. They didn't always do the kind of job we wish we did. However, sometimes, people did change the spelling of their name on purpose. For example, I have a bible page (the story there is that an aunt destroyed the rest of the bible because of a divorce -- don't know for sure, but I have the one page!). It lists ten births (my gr gr grandfather is the first one). The first eight children have the last name spelled Osborn and the last two Osborne. It appears to be all the same handwriting. In this case, the story is that the family added the "e" because someone in the family was convicted and shipped to Australia and they didn't want to be associated with the convict. I have been unable to prove or disprove this and am hoping that someday I will be able to confirm/deny this is the case.
