John Follesdal has written some interesting articles about Norwegian farms and naming patterns. You'll find them on his site: http://homepages.rootsweb.com/~norway

In 1875 Østen Olsen, his wife Anne and their children Marit and Petra were living on Vasrusten farm. No Ole.Maybe he emigrated before 1875?
I found Ingebret and Rønnaug Østensen Vasrusten in the emigrant list from Oslo.
Ole,most likely would use Østensen as his surname. The farm name was an "address name" that was changed if they moved to another farm.
Have you tried making the letter Ø by holding the ALT key while typing 0216 on your numeric keyboard? Thats the way I do it.
Wish you luck!
