SHESS Family, Living in Defiance Co. OH 1870 Census

I am researching this line for my children, and it's taken me to Defiance Co. OH.

John SHESS, b. Wirtenburgh (sp) is living in Noble, Defiance Co. OH in the 1870 census. Wife Elizabeth b. Bavaria. They are living with the following children:
Charlie b. Indiana age 13
Charlotta b. Ohio age 9
Martha b. Defiance, OH, age 7, b. 20 Feb. 1863 *Source her death record State of Oregon.
John H. b. Ohio age 4
Andrew b. Ohio age 2.

After the census, the family had two more children, Frederick & Elizabeth (Elisabeth) before moving to Rolland Twp, Isabella Co. MI.

When did Ohio start keeping birth records?

This name varies in spelling. SHIESS/SCHIESS, SHEISS/SCHEISS, SCHEES and finally SCHEESE.

I'd like to share information back & forth with anyone else researching this line.
