Tracing O'BRIEN ancestry, often come across BRIEN/BRYAN....

I trust to have found O'Brien ancestors on the Griffiths Land Valuation in Kilcoole (Co. Wicklow, Ireland) under the surname, BRIEN

I do realise that names were often spelt as heard, but can anyone account for the missing 'O', and/or why might it have been added?
