Siri is known as Børildsdatter because her father's name was Børild. Her name would never have changed even if she married. She remains her father's daughter her entire life.
When daughter Ester was born Siri B. was not married. In 1865 census Siri B. was not married. The mother Siri B. wasn't living on the same farm with Ester in the 1875 census -- that is a different woman named Siri Pedersdtr. In 1885 census Siri B. isn't married. I don't see any evidence that Siri B. ever married. Her daughter, Ester, was illegitimate and Siri B. doesn't appear to have ever married.
Esther lists her parents as Enok and Siri NOT because they were ever married but because they are her birth parents.
