Have you tried the cemeteries in and around Middletown / Red Bank? There are a number of Vanderveer burials in Fairview, Mt Olivet and Christ Church. I do not recall seeing anything that old as the stones were probably worn from weather but the cemeteries themselves might be able to help. Also, the library on Rt.35 in Shrewsbury has quite alot of genealogical data including early NJ marriages and many other useful bits of data.

I have transcribed some of the cemetery data to my site, DistantCousin.com but none of the transcription is older than 1800.
