According to the book "Slekten Nissen fra Bov Sogn" by Gunnar Brun Nissen and Harald Nissen (the latter being my mother's brother and Gunnar is my grandfathers brother)
the insignia/coat of arms is, and I'm quoting the book in my translation, p. 82 chapter VIIII The Family's Coat of Arms:

"The Family's coat of arms is a red buck on a silver background, leaping right to left from behind three green trees. On the helmet one accending red buck, or a buck jutting out from the first of three green trees."
