I have been looking into the Nidiffers quite a bit lately. You have the same information that I have. I don't have much on Hattie but on some of the siblings I have a good bit more. I have a picture of Jesse and family taken circa 1900. I could not put names on everyone in the picture so I sent it to my mother who seems to think she can.
The search for Amanda Ellison has been difficult. Folklore has it that Jesse Nidiffer is part Cherokee but without information on Amanda, I can't verify it. Amanda died when Jesse was quite young and I think he spent some time with the Carrigers. In his later years Samuel was blind.
I have gone down some erroneous paths looking for information on Samuel and Amanda. We are working on the same family line so perhaps we can compare notes.
