Just a thought - Ouellette in French was pronounced like
"well-ETT" (the last syllable was emphasized), so it often became spelled as Wellett or more often Willett, and over time the first syllable got the emphasis, which is more common in English.
If you are not sure if this family actually settled in NH, you could try the NH State Library in Concord, or the Franco-American Society in Manchester, NH, where 10,000's of names are recorded. Another excellent source of info on Franco-American family history is in Woonsocket, on the border of MA and RI. You can GOOGLE for this information using expressions like 'franco-american family names' or similar phrases - or check the state forums for MA and RI on this site.
