Nancy in 1790 there were 3 at least separate Joseph Wilson's living in New Hampshire:
WILSON JOSEPH NH CHESHIRE CHARLESTOWN 1790

WILSON JOSEPH NH CHESHIRE KEENE 1790
By 1800 there were 5:
WILSON JOSEPH NH CHESHIRE KEENE 1800
WILSON JOSEPH NH CHESHIRE KEENE 1800
WILSON JOSEPH NH CHESHIRE CLAREMONT 1800
WILSON JOSEPH NH CHESHIRE CHESTERFIELD 1800
WILSON JOSEPH NH CHESHIRE STODDARD 1800
It appears that there were a large number of Joseph Wilson's in the Cheshire County area of NH.
Your best bet would be to locate their death certificates, if you have them, and see what information that provides you.
As far as birth, marriage and death records in NH, the NH Bureau of Vital Records is the state resource for individuals wishing to obtain copies of birth, marriage, divorce and death certificates.BVR also has a genealogical research vault that is open to the public containing records that date back to the year 1640. However, the State of NH did not require town clerks to send records to the Bureau until the early 1800's. You probably want to first check with the town clerk for the individual Town to see what records they do maintain. Since you don't know the town, then your only avenue open is the Bureau.
