Catholic Church records

I am in need of some guidance with Catholic church record research... I'm searching for Catholic church records from the late 19th and early 20th centuries in two different areas of NH. The first area is Westville - Plaistow, and the second area is Somersworth - Salmon Falls Village (this name is a mystery to me, but it was given in the 1900 NH census). Is there a central repository for Catholic records in NH from this period, or will I need to contact each parish separately? How do I find out which parishes served these communitites, and which still exist? What happens to the records if a parish no longer exists? Thanks for any help you can provide.
