Hi - I don't know if this will help, but I do find an Elizabeth Gibbs in Hyde County, but she was born in 1805 to parents Cason Gibbs (1747-1826) and Phebe Harris (?-1835) However, she does have a brother, Oliver, born about 1800.

There are several Gibbs lines in Hyde County. For your adult Gibbses to be head of household at that time, they are likely widows. Then again, with the surname being so common, Gibbs could also be their maiden names.
