Since you've already tried the death certificate route, I'd say look through the deeds and probate records of Attala and Monroe Counties to see if Parthena Jones shows up relative to an Armstrong or Oakes. The Archives in Jackson probably has all of that on microfilm. It probably wouldn't take but an hour or two if you had to hire a researcher to do it as those records are usually indexed. I'd start with will books and then the deeds to see if Parthena purchased or sold any land that may have been part of her father or mother's estate.
Lastly, if Jeremiah Jones was a Confederate veteran, Parthena may have filed for a CSA widow's pension based on his service. The applications are available at the state archives and may give you some information.
