You may be in luck. A database for all Ireland is being created by the Irish Family History Foundation (IFHF). Eventually it will cover all Ireland. IFHF is at http://brsgenealogy.com/. I traced my ancestry to Kilcommon, Tipperary, by knowing only the birth year for one child (Catherine) born in Ireland, the names of her parents (Martin Connors and Mary Dwyer), and the estimated year of marriage.
The IFHF database(s) gives you records back to about 1800 (it varies among Parishes and Counties). Kilkenny was just added to the database. More may be on line in 2008. Search the database(s) using the forename and surname for your emigrating ancestor. Experiment with the IFHF free search; Precision helps. Whittle the "hits" down to a few possibilities by using the screening tools(b/m/d, parish, etc). The IFHF charges 10 euros each to view the final set of hits
