This is fabulous news, because your grandfather can confirm (we hope) the information. Sometimes stuff we have forgotten comes back when someone says the name and the information. I didn't note the married names of several daughters of George Sylvester Callais. The index to use to look them up is called Minnesota Official Marriage System (MOMS) at www.mncounty.com. Use the "Certificate Search" menu.
The census is also a good source of clues about spouses and children. Sometimes family names repeat, so it's best to have a marriage license, etc. to confirm it's the right person. Here's a reference to Robert D. Callais having a spouse named Hazel, working for the US Army and living at 317 NW 8 AVE. in Faribault, Minnesota, in 1945, as listed in a city directory:

U.S. Obituary Collection on Ancestry.com lists an obituary for:
Robert Dean Callais
SPOUSE: Hazel Graham
PARENTS: George and Edith Callais
...and here is an obituary for Robert Dean Callais, who moved to Helena, Montana, after World War II. The obituary lists his children - your cousins:

Find-a-Grave info
Robert Dean Callais
Birth: Apr. 19, 1922 in Northfield, Rice county, Minnesota
Death: Apr. 25, 2011 in Livingston, Park county, Montana
Burial: Park View Memorial Gardens in Livingston
A public family tree on Ancestry.com includes some wonderful photographs of Robert and family. You can sign up for a free trial membership to access the tree.
Kenneth A. Callais was also a veteran and is buried in our national cemetery for veterans at Fort Snelling:
Birth: Dec. 27, 1920
Death: May 2, 2004

James Callais was also a veteran, and an obituary can be found at the link below. His survivors include only two siblings, Vicki in Inver Grove Heights, and Mabel in Pine City. Presumably Vicki may be named after George Sylvester Callais' mother Victorine.
Birth: Dec. 17, 1931 in Waterford, Dakota county, Minnesota
Death: Dec. 30, 2011 in Saint Cloud, Stearns county, Minnesota
Spouse: Isabelle Hilsgen

We don't have an exact date of birth for John (just "circa 1937"). But probably this is a memorial to him (link below) because the Ancestry.com discussion says "your" John died in 1989. Also a veteran, John is also buried at national honor cemetery for veterans at Fort Snelling in Minneapolis:
John Francis Callais
Birth: Sep. 27, 1936
Death: Dec. 25, 1989

Let me take a moment here to thank your family for their service to our country!
You might want to post a PUBLIC comment in the Ancestry.com thread I mentioned earlier. Free to do that - you don't have to be a paid subscriber to Ancestry.com. Just register with the site, which is free.

The thread was about an entirely different Callais family. But at least three of the participants were talking about YOUR Callais family. If you have a subscription to Ancesstry.com (paid or free trial subscription), you can write those cousins a PRIVATE message.
You now also have information about descendants from the obituaries posted. You likely will find some or many of those younger people on Facebook if you look. You cousins could have a Callais family reunion if there's enough interest. Might be fun to get the family together and snap a photo.
All best!
