BIG CHANGE - I now think George is likely the son of Alfred, not Sylvester.

There is no 1890 census so we can't find George as a little toddler with parents...but in the 1900 census George is not with the Sylvester-Sarah Callais family. So I searched some more. I now think he's the son of Alfred Victor Callais (the brother of Sylvester). The mother's maiden name on George's death certificate is "Christop" - which fits the name of Alfred's wife.
