Easter Tradition

My family always likes the same meals at holidays. I guess that means they must be good.

Leg of Lamb
Roast new potatoes & gravy
Mint sauce
Crescent Rolls
Asparagus w/ Hollandaise

I always ‘cheat’ on the gravy. I used packaged or canned products (beef for lamb.) Then I can add drippings later, refrigerator and skim off the fat. I normally have a ‘helpless’ dinner so I am always looking to cut corners.

Funny but sad lamb story:
A few months before my father died he visited my husband, baby and I. This was a rare treat as he was racing (sailing) close by and spent the night with my family rather than going home. I purchased a leg of lamb thinking this was a gala occasion. When he arrived he said, ”What do I smell for dinner?” I gushed how special this time was ….

After he died my mother informed me that he didn’t like lamb. I will always admire him for being so kind.
