Remember Casseroles?

Maybe it is time to pull out those old recipes. Our casseroles contained the entire meal: meat/poultry/fish, starch and vegetable. They were normally very inexpensive. Although we did sometimes have steak, veal, lamb and pork chops and even lobster tail, the casserole was standard fare. As a child our freezer held two ice cube trays; so making double, triple portions was not an option.

I used casseroles when first married (early 1970s) because they were cheap but took time to make. At that point my freezer was large enough to hold several prepared dishes. I gradually went to the big slabs of meat/poultry/fish with frozen vegetables. Today I buy prepared food at a huge cost or use just fresh ingredients.

I also remember that when a family had a death, everyone was asked to ‘send a casserole.’ Why? It could just be heated in the oven (no microwave ovens) and it was a meal.
