Knights in general had no different ranks. They were free men that just had to follow their sirs into battle. There were just the unofficial 'ranks' of rich and poor knights. The rich had better armours than the poor and greater entourage. Before becoming a knight you had to be a squire like you said, which must not mean that squires were just always young boys, they could also be older.

For solving your problem you could let join your character an order. They had ranks. The Teutonic Order for example. But I have no idea which ones. Or you spent your character money for better equipment. Or you assign him some duty like treasurer.
