How/where are probate records kept for Washington County?

I'm wanting to get a list of children for a possible ancestor who died in Eastport, Washington County in 1865. If he wrote a will, where would I find it? And if he died intestate, would there be other types of probate records, such as estate inventories/sales, annual returns, etc? And would they be organized together in a single file, or scattered among different court books? I'm not at all familiar with probate research in Maine, so any advice would be greatly appreciated!
