Catherind McSorley and Owen QUIN, Tyrone, IRL

Looking for birth details of Catherine Mc Sorley b Co Tyrone, father possibly Thomas. No year given. However her husband was b 1804, also Tyrone so maybe about that time or a bit later.
They emigrated to Australia in 1841 on the ship "Cadet", possibly with some children. I have yet to check the shipping records.

Am interested to find the wedding date and baptimss of any children in Tyrone before 1841. How would I go about this please, when I don't even know a town to start looking?
