If you specifically want to know about when your Fountain McKenney/McKinney changed the spelling of his name, you'd have to check original records that have his signature.

However, in general: don't take the spelling of surnames (including our owns!) seriously in those early years! In my family's records nearly every court clerk or census taker spelled our name McKinney (or McKiney - or one of various other ways). But on the records where I can see a signature, it was always spelled McKenney.

There is a Bible record in Pendleton County, Kentucky for a McKinney/McKenney family (about 1830 +/- a decade or so) in which the name is spelled BOTH ways on the same page!

So the message here is: people didn't take the spelling of their name very seriously. Actually - spelling of all words was pretty creative before the advent of Daniel Webster's dictionary.
