Dear Jim,
To answer your questions:
1. I knew William was a son of Alexander because he appears in Turkeyfoot and later Addison tax records as William of Alex or "A." (1843, 1845, 1846, and 1848). He also appears in the Continuance docket of 1841 as "William McClintock of Alex". There exist 4 possibilities for an "Alex" with a son "William" old enough to be in a lawsuit and own land in 1841: Alexander, son of original Alexander (discounted because he moved away in 1809, and had little, if any contact with the family after that. He was the one who accidentally killed his father.) Alexander son of Robert, who married his first cousin Polly McClintock, was only 22 himself in 1841, not old enough to have a son william of the right age. Alexander son of John was about 36, but his kids are well documented, and his oldest, John, was only 16 in 1841. William and Elizabeth Wilkins McC.'s oldest was Alexander, about 44 at the time, and old enough to have a William who was in turn old enough to own land and stand up in court. Teh 1840 Henry Clay Twp, Fayette Co. census shows he has at least 3 sons and 2 daughters, possibly one more son.

2. I knew Eston was a son of Alexander primarily because of that Jasper Co 1885 census. Again, there are a limited number of possibilities for a male McClintock old enough to have a son born in 1829. Robert (1770) has two possible sons, but that is my line, and I am confident that I have all their kids accounted for. John (1777) stayed in the Somerset area, and his line is well documented, so I discounted his four oldest sons. That leaves William and Elizabeth Wilkins Mc's four oldest sons Alexander/Polly, Mitchell/Huldah and Margaret, Big Eston/Mary, Robert/Harriet. Mitchell already has an Eston born in 1840. Big Eston has tax records that state his marriage in 1830 and census records show his first child was born in 1831 - Rachel. Robert (who I'm not sure belongs to this family) moved to WV in 1840, and this Eston says he lived in Somerset until 1854. That leaves Alex and Polly, who lived in Somerset until - interestingly enough - 1853, when tax records on his 100 acre farm end.

3. No, I didn't know "Olla"s name until you provided it, but I suspected that it was Polly.

4. About parents being born in Ireland, no, it is not right for William and Elizabeth Wilkins. William was born in Lebanon Co., and Elizabeth in Bedford Co. But it is extremely interesting to me because it could be for Alexander original and Mary Eston, Alexander's grandparents. I am pretty sure Alexander arrived in the colonies in the fall of 1767, but cannot "cross the ocean" for him. That comment is a great lead for me.
