Bandon ancestors with following surnames: McCarthy, Harris, Parat (Perrott/Parr

Looking for information on Callaghan and Jane (Parat)McCarthy, both born 1797 in Bandon

Earliest recorded ancestor date:
•       Marriage of Thomas Knight (Bandon Bridge) to Martha Allin (Boalnamore House) on August 14, 1682 at the Friends Meeting House at Cork.
•       Son of Thomas, John Knight married Hannah Badcock October 26, 1718. Son Henry immigrated to the United States and married Elizabeth Harding at Trinity church in Phil. On Nov 25, 1748.
•       Allin/Knight lineage through my father’s maternal line of Pumyea, in Mt Holly, New Jersey.
My father was Cooper R McCarthy, born in Devon, Pennsylvania on October 12, 1927. His paternal lineage came from Bandon, Ireland, as well.
McCarthy genealogy story is as follows:
•       Callaghan and Jane (Parat/Parrot?) McCarthy were both born in Bandon, Ireland in 1797.
•       They were married sometime around 1817. They moved to London. Callaghan was a handloom weaver. They had one son, John McCarthy (my gggradnfather), who was born November 25, 1819 in London.
•       In 1831, John and his mother, Jane, travelled by boat to Cobh and then by carriage to Bandon to visit his maternal grandmother, Mary Ann Harris Parat (Parrott?). They stayed 3 months at her house “large house” on Main St.
•       John learned to read at the Methodist Sunday School. He enjoyed salmon fishing in the Bandon River with his uncle Richard Cole. (I am unsure how he was related.)
•       In 1833, Callaghan, Jane and John McCarthy immigrated to the United States through NY and settled in Philadelphia. His grandmother Mary Ann Harris paid for their passage to America.
•       John became a “roller boy” or “printer’s devil” and also worked at a grocery store. Overtime, he became quite learned and was member of the Washington Literary Association. He married Martha McLaughlin on December 24, 1844. First child, Harry, arrived in fall of 1945. They had 7 children. One of whom was my ggrandfather, Edmund Burke.
•       Edmund Burke married Emily Dilhorn Johnston, Nov 7, 1894. They resided in Devon on Waterloo Rd. Had one son, Ronald J McCarthy (my grandfather) in April 1896.
•       Ronald married Florence Pumyea (Knight/Allin lineage from Bandon). They had three children: Ann Derle’, Cooper Reid, Elizabeth Pumyea
My McCarthy ancestry questions are:
•       I have no information on Callaghan McCarthy (b.1797). I’d like to know who his parents and siblings were. Are there any related McCarthy’s in Bandon still today?
•       Mary Ann Harris Paratt is of interest , as I assume she is related to the Harris family. I would like to know the names of her parents, her husband’s name (which spelling Perrot or Parrot), how she was related to Richard Cole. Are there any descendents in Bandon today?
•       Lastly, I’d like to know more about John McCarthy’s children/ Edmund Burke’s siblings. I’d be interested in names of the children.
My Allin/Knight ancestry questions are:
•       Are there any Martha Allin and Thomas Knight descendants still in Bandon?
