I don't know if this is your Dudley, but there weren't that many Dudley Mays that I've come across, and this is the right county -- Allen KY 1860 census Catherine Maze, 60, born VA, housekeeper; Amanda C. Maze, 21, born TN, seamstress; and Dudley Maze, 30, born VA, trader.
I am not sure if Catherine is his mother, but it could be. I found an 1850 census record in Allen Co KY for a William Mays, age 55, and wife K., 55; and children: E., a female; D, a female, both born in VA; and MJ, female; L, male; and AJ, female, all born in TN. If Dudley was of this family, he might have been out of the house already at age 20.
