I have just recently made the connection to this family and find your post very interesting. I am descendant of Elvira Maxwell Parks, she was my GG grandmother. My mother had in her records that her husbands name was "Jurd" this is the way they pronounced Jordan in the south. this has kept me from finding this family for a long time. Also I have been looking for a Mattie Maxwell. It seems Elvira had many nicknames, Ellie, Ella, Mattie and may be more.
My Mothers notes say after the death of Jordan Stokes Parks, husband of Elvira (she was 30) she put all her kids in a covered wagon and took them to Texas from Ark. In the 1870 census she is living next door to Robert Parks, brother to her husband. Her son Issac Henry Parks is my G grandfather.
Also Elvira's son William Jordan weighed 466 lbs when he died. They had to take the door off the house to get the handmade coffin out.
