When all else fails, there is always prayer. By 1842, the RC church had a good, solid foot-hold in Australia, but not as firmly entrenched as it would like. Your Patrick and Ellen were undoubtedly married in one. If so, the event and particulars about parents, POB, etc., were almost always recorded.
Contact the RC diocese having control over the parish for Port Fairly. Sometimes the hierarchy can be cajoled into scrounging through its archives (hint: a big "donation" helps focus its attention).
Another clue, but sometimes a long-shot, is the Irish Naming Tradition. If you know the birth order of his 1st few children, male and female, this is often a clue to their parent's forenames. Google it to see how it goes.
If I counted right there were 21 children. So that's what people did before the telly, cinema, and other amusements!
