I decided to look at St Valentin, Quebec on the 1851 census since Noel & Mathilde were supposedly married there. The 1851 census is available at: http://www.collectionscanada.gc.ca/archivianet/1851/index-e.html
Punch in Valentin on the basic search. Go to the one that says Huntingdon County. Next click on "associated images" You will find Noel Charbonneau on page 17 (show as 8d,9a,17) living with his 66 yr old widowed father and a couple of brothers. On the next page (19) you will see Mathilde Boudreau age 18 living with her widowed mother and a couple of sisters. That page is a little hard to read so I can't really make out her mother's name. Women are often listed on Canadian census with their maiden name which is why her mother is not listed as Boudreau.
