question about the name

I have a question. I know my husbands family came from Ireland, or England, actually they were English who owned land for hundreds of years in Ireland due to their loyality to the English throne. My question is this....there are so many different spellings of the Luttrell name and I am wondering why? I have been told by elders in eastern KY that when family members had disputes with other family members, they would just simply change the spelling of their names. Back then, there was no law against it. Is this really true or do any of you have a alternate theory.
Any info would be greatly appreciated. I like the oddities of the past and find them so so interesting. I believe that it sheds light on their time and place in history.
