Yes, people were at the mercy of the census-takers for the spelling, and even sex and race.I've found even those wrong occasionally.
When you said "her maiden name may have been Johnson," whom did you mean?
I believe this is the second marriage of Fannie's father Lemuel, and that Matilda was married to a Johnson before and brought two children to the marriage:
