There is an excellent cookbook that I have been using - all recipes have come out perfect and there is a recipe for Kibbe al-Samak - The book is called "From the Land of Figs and Olives" by authors Habeeb SALLOUM and James PETERS. I purchased mine from Barnes and Nobles bookstore. Some bookstores carry it on their shelves otherwise a special order takes 2 or 3 days. I believe Amazon may have it as well and now it's in paperback version. Good luck - all types of kibbe in it turned out perfect!
