Matt,

Don't have direct information but consider the following points for your future research:

1 - Moutsie is most likely the name "Moussi" or "Moussa", both of which mean Moses.
2 - This is quite likely the patronimic used by your ancestor so Sabo may have been their last name anyhow
3 - although you think they were catholics, keep in mind that Tripoli, which is mostly moslem, is surrounded (south) by the region of El-Koura, almost completely Orthodox Christian, their largest concentration in Lebanon.
4 - Orthodox priests are allowed to marry, this may explain why your ancestors were priests (and that you exist in spite of it!).
