Have you ordered Jack's death certificate yet? The LA Death Index lists the following for him:
Jack Anderson
Death Date: 24 Dec 1940
Estimated birth year: 1866
Age: 74 Years
Gender: Male
Race: White or Mexican
Parish: Caddo
Certificate Number: 16082
Volume: 37
Title: Louisiana Statewide Death Indices 1940-1944
You can order the actual certificate from the LA Secretary of State's office. This should give you the names of his parents, to the best knowledge of the informant.
I also couldn't tell from your title if you were looking for the 1900 census entry for this family or if you already have it. I went to look for it just in case, and it has more information than you list, including Jack's father (must have been confusing to have 3 Jacks in one household!):
