Orphanages and Convents in LA

I am trying to find information on the family of Eva Regina Knox (maybe Eve Belle Knox) in Louisiana, maybe New Orleans. I have little to no information on her; she is my great grand mother. She was born 19 January 1884. Evidently, she was placed in an orphanage/convent some time after 1884 when her mother died from Yellow Fever. I do not know her parents’ names. In 1899 she married John Calvin Evans (my great grand father), evidently he found her in the orphanage/convent, and they settled in Texas. I have no idea if there are siblings. I am told her mothers maiden name is Minesau – could be spelled in any form.
