The earliest records (1860s-1910) from Immaculate Conception Church have all been lost.

Did you check 1850 NC Census? Given the ages of the children, Silas Stevenson may have been living at home with his parents. Beginning with 1850 all members of the household were identified by name, sex, and age.
There was no surname for Caroline. A check of later censuses my reveal additional information you can use.
I know how difficult it is to find a paper trail when records have been destroyed. I have been researching in Muscogee Co., GA for almost 10 years, trying to find information on my husband's Wells' ancestors prior to 1805, however, the courthouse in Columbus, Muscogee Co., GA burned in 1838 and was burned again by Union Troops during the Civil War.
