I've noticed the same thing. Some of my family members are missing from the 1860 census. They lived in the SW part of the parish, Bethany to Spring Hill area. I've heard no explanations why.

I've thought about trying to estimate the number of people on the microfilmed census, then compare that with the "official" population for Caddo Parish for 1860 and see if maybe part of the census was not microfilmed.
